A simple, forgiving 7-day method for creating a bubbly, active sourdough starter from scratch using just flour and water. Perfect for beginners who want to bake artisan bread without complicated tools or schedules.

Ingredients

  • All-purpose flour (unbleached preferred)
  • Whole wheat flour (optional, recommended for first few days)
  • Filtered or tap water (room temperature, non-chlorinated)
  • Rye flour (optional, for faster fermentation)

Instructions

  1. Day 1: Combine 60 grams (about 1/2 cup) all-purpose flour and 60 grams (about 1/4 cup) room temperature water in a clean glass jar. Stir until no dry flour remains. Scrape down sides, cover loosely with a towel or coffee filter, and place in a warm spot. Let sit undisturbed for 24 hours.
  2. Day 2: Discard half the starter. Add 60 grams (about 1/2 cup) all-purpose flour and 60 grams (about 1/4 cup) room temperature water. Stir well, scrape down sides, cover, and return to warm spot. Mark the height with a rubber band.
  3. Day 3: Discard half the starter. Feed with 60 grams (about 1/2 cup) all-purpose flour and 60 grams (about 1/4 cup) water. Stir, cover, and let sit. Check after 6-8 hours for rise.
  4. Day 4: Discard half and feed with 60 grams (about 1/2 cup) all-purpose flour and 60 grams (about 1/4 cup) water. Watch for doubling in size within 12 hours.
  5. Day 5: Discard half and feed again. Look for doubling within 6-8 hours. The smell should become pleasant (yogurt-like).
  6. Day 6: Discard half and feed. Starter should consistently double within 6-8 hours and be bubbly and airy.
  7. Day 7: Feed as usual. After 4-6 hours, perform the float test: drop a spoonful of starter into a glass of room temperature water. If it floats, it’s ready to use. If not, continue daily feedings.

Notes

Use unbleached all-purpose flour for best results. Keep starter in a warm spot (75-80°F). If kitchen is cold, place on top of refrigerator or in oven with light on (oven off). Discard is essential for balance; save it for pancakes, crackers, or waffles. Starter is resilient; if neglected, revive with consistent feedings. The float test is a good indicator of readiness but not the only measure.
