  • 1 cup shredded sharp cheddar cheese
  • 1 cup whole milk or 2%
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon all-purpose flour
  • 8 ounces small pasta shapes (shells or elbows)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Pinch of salt
  • Pinch of pepper
  • Optional: 1 tablespoon plain Greek yogurt
  • Optional: Pinch of smoked paprika

Instructions

  1. Bring a large pot of salted water to boil. Add cauliflower florets and cook for 8-10 minutes until tender.
  2. During the last 6-8 minutes, add pasta to the same pot and cook until al dente (about 8 minutes).
  3. Drain pasta and cauliflower together, reserving about 1/4 cup (60 ml) of pasta water.
  4. Transfer cooked cauliflower to a blender or food processor. Add 1/2 cup (120 ml) reserved pasta water and blend until silky smooth, adding more water if needed.
  5. In a medium saucepan over medium heat, melt butter. Sprinkle in flour and whisk constantly for 1-2 minutes without browning.
  6. Slowly pour in milk while whisking continuously. Cook until sauce thickens, about 3-5 minutes.
  7. Stir cauliflower puree into the milk mixture. Add shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until cheese melts and sauce is smooth, about 3-4 minutes.
  8. Taste and adjust thickness with more pasta water if needed. Adjust salt for milder flavor if desired.
  9. Toss cooked pasta into cheese sauce, coating evenly. Warm through on low heat for 1-2 minutes.
  10. Serve warm, optionally topped with extra cheese or finely chopped fresh herbs like parsley.

Notes

Use smaller cauliflower florets for faster cooking and smoother blending. Warm milk before adding to roux to prevent lumps. Blend cauliflower until very smooth for best texture. Boil pasta and cauliflower together to save time and cleanup. Optional add-ins include Greek yogurt for tang or smoked paprika for mild smoky flavor.
