A flavorful and easy-to-make loaded cheeseburger recipe featuring juicy beef patties, melted sharp cheddar, crisp veggies, and a creamy, tangy secret sauce that elevates every bite.

Ingredients

Scale
  • 1 lb ground beef, 80/20 blend
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 4 slices sharp cheddar cheese
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp finely chopped dill pickles or pickle relish
  • 4 hamburger buns, lightly toasted
  • 1 cup shredded iceberg lettuce
  • 1 large ripe tomato, sliced
  • ½ cup thinly sliced red onion, sautéed (optional)
  • 8 dill pickle slices

Instructions

  1. Prepare the Secret Sauce: In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, Worcestershire sauce, smoked paprika, garlic powder, and chopped pickles. Taste and adjust seasoning. Refrigerate while you prep the rest (about 5 minutes).
  2. Make the Patties: In a mixing bowl, combine ground beef, garlic powder, onion powder, salt, and black pepper. Gently mix with your hands until just combined—over-mixing can make the patties tough.
  3. Shape Patties: Divide the mixture into 4 equal portions (about 4 oz each). Shape into round patties about ¾ inch thick. Press a slight indentation in the center of each patty to prevent puffing during cooking.
  4. Cook Patties: Heat your skillet over medium-high heat and add a tiny drizzle of oil if not using cast iron. Place patties in the hot pan and cook for 3-4 minutes on the first side without moving them to develop a crust.
  5. Flip the patties and immediately add a slice of cheddar cheese on each. Cook for another 3-4 minutes for medium doneness. For well-done, add 1-2 more minutes but avoid drying out.
  6. Sauté Onions (Optional): While patties cook, add a little oil to another pan over medium heat. Toss in sliced onions and cook for 5-7 minutes until soft and slightly caramelized.
  7. Toast Buns: Lightly butter the hamburger buns and toast them in a pan or under a broiler until golden and crisp (about 1-2 minutes).
  8. Assemble Burgers: Spread a generous spoonful of secret sauce on both top and bottom buns. Layer bottom bun with shredded lettuce, cheesy patty, sautéed onions, tomato slices, and pickle slices. Cap with top bun.
  9. Serve Immediately: Enjoy fresh and hot with melty cheese and creamy sauce.

Notes

Do not over-handle the ground beef to keep patties tender. Press a slight indentation in the center of patties to prevent puffing. Toast buns lightly to prevent sogginess. Make secret sauce ahead for deeper flavor. Let cooked burgers rest 10 minutes for juiciness. For variations, swap cheddar for pepper jack or use turkey or vegetarian patties. Grilling adds smoky flavor but watch cooking times.
