A simple and juicy slow cooker pork tenderloin recipe with sweet-tart apples, perfect for cozy dinners with minimal prep and maximum flavor.

  • 1.5 to 2 pounds pork tenderloin
  • 2 medium apples, peeled, cored, and sliced (Fuji or Honeycrisp recommended)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth (120 ml)
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh thyme or rosemary sprigs

Instructions

  1. Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides. Optionally, sear in a hot skillet with a little oil for 2-3 minutes per side until browned.
  2. Place the sliced onions at the bottom of the slow cooker.
  3. Arrange the sliced apples on top of the onions.
  4. Lay the seasoned pork tenderloin over the apples and onions. Sprinkle the minced garlic over the pork and apples.
  5. Pour 1/2 cup (120 ml) of low-sodium chicken broth around the edges of the pork, avoiding pouring directly on top.
  6. Add a few sprigs of fresh thyme or rosemary if using.
  7. Cover and cook on low for 5 to 6 hours, or until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  8. Remove the pork and let it rest for 5-10 minutes before slicing. Spoon the cooked apples and onions over as a topping or side.

Notes

Searing the pork before slow cooking is optional but adds extra flavor. Use a meat thermometer to ensure pork reaches 145°F to avoid dryness. Rest pork before slicing to retain juices. If broth level gets low during cooking, add more broth or water. Fresh apples like Fuji or Honeycrisp hold shape best. This recipe is naturally gluten-free and dairy-free if broth is gluten-free.
