A quick and easy small batch spiced fig jam featuring fresh figs, rosemary, and balsamic vinegar for a flavorful twist. Perfect for gifting or topping cheeses and meats.

  • 12 ounces fresh figs, washed and quartered
  • ⅓ cup granulated sugar (65 grams), adjust to taste
  • 1 large sprig fresh rosemary
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger (optional)
  • 2 tablespoons water

Instructions

  1. Rinse and quarter about 12 ounces (340 grams) of fresh figs. Set aside.
  2. In a medium saucepan, combine quartered figs, ⅓ cup granulated sugar, 2 tablespoons water, 1 tablespoon balsamic vinegar, 1 tablespoon lemon juice, ¼ teaspoon ground cinnamon, and ⅛ teaspoon ground ginger if using. Add the whole rosemary sprig. Stir gently to mix.
  3. Place the pan over medium-low heat and bring to a gentle simmer (about 5 minutes). Reduce heat to low and cook uncovered for 30-35 minutes, stirring every few minutes to prevent sticking. Add a splash of water if jam becomes too thick.
  4. After about 30 minutes, test the jam’s thickness by spooning some onto a cold plate. If it gels and doesn’t run quickly, remove the rosemary sprig. Mash some figs gently if a smoother texture is desired.
  5. Let the jam cool to room temperature for 15-20 minutes, then transfer to clean jars or containers.

Notes

Stir often to prevent scorching. Use ripe but firm figs for best texture. Lemon juice helps preserve color and freshness. Jam thickens as it cools; test consistency on a cold plate. Refrigerate in airtight container for up to 2 weeks or freeze for longer storage. Fresh rosemary preferred; if using dried, use less and add earlier in cooking.
