  • 1 large egg, room temperature
  • 2 cloves garlic, minced

  • 2 tablespoons soy sauce (preferably low sodium)
  • 1/4 cup honey (85 g)
  • 23 tablespoons sriracha sauce (3045 ml), adjust to taste
  • 1/4 cup ketchup (60 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 1/2 teaspoon ground ginger
  • Freshly ground black pepper, to taste
  • Pinch of salt
  • Optional garnishes: toasted sesame seeds, chopped green onions

Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, egg, minced garlic, chopped onion, salt, and black pepper. Mix gently until just combined, about 5 minutes.
  2. Shape the mixture into 1-inch meatballs, about 20 pieces. Place on a baking sheet or plate. (Approx. 10 minutes)
  3. In a separate bowl, whisk together honey, sriracha, ketchup, soy sauce, rice vinegar, and ground ginger. Adjust spiciness or sweetness to taste. (Approx. 5 minutes)
  4. Place meatballs in the slow cooker in a single layer if possible. Pour glaze evenly over meatballs and gently stir to coat without breaking them. (Approx. 5 minutes)
  5. Cover and cook on low for 4 hours or on high for 2 hours until meatballs are tender and glaze is thick and sticky. Avoid lifting the lid frequently.
  6. When done, gently stir meatballs to coat again. Sprinkle with toasted sesame seeds and chopped green onions if desired. Serve immediately.

Notes

Do not overwork the meat mixture to avoid tough meatballs. Brown meatballs first for extra flavor if desired. Use a slow cooker liner for easier cleanup. Adjust sriracha to control spice level. If glaze is too thin at the end, thicken with cornstarch slurry and cook on high for 10-15 minutes.
