  • Juice of 12 fresh lemons, plus extra wedges for serving

  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)

Instructions

  1. Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels.
  2. In a medium bowl, combine softened unsalted butter, minced garlic, smoked paprika, chopped parsley, salt, and freshly squeezed lemon juice. Stir well until fully blended.
  3. Add the shrimp to the bowl and toss until evenly coated in the garlic butter mixture. Let sit for 10 minutes at room temperature.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  5. Thread 4-5 shrimp onto each skewer, piercing each shrimp through the thickest part. Leave a little space between shrimp for even cooking.
  6. Preheat grill to medium-high heat (about 375°F / 190°C). Brush grill grates with olive oil to prevent sticking.
  7. Place shrimp skewers on the grill and cook for 2-3 minutes per side, brushing with additional garlic butter each time you flip.
