  • 12 slices thick-cut bacon, partially cooked
  • 1/4 cup bourbon (60 ml)
  • 2 tablespoons packed brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon olive oil
  • Optional: red pepper flakes for heat
  • Optional: coconut sugar as a brown sugar substitute

Instructions

  1. Pat the steak tips dry with paper towels. Toss them in olive oil, salt, black pepper, smoked paprika, and minced garlic. Let sit at room temperature for 15 minutes.
  2. Partially cook the bacon by laying slices on a parchment-lined baking sheet and baking at 350°F (175°C) for about 10 minutes until just starting to crisp but still pliable.
  3. Wrap each steak tip snugly with a bacon slice and secure with a soaked skewer or toothpick.
  4. In a small saucepan, combine bourbon, brown sugar, and a pinch of red pepper flakes if using. Simmer over medium heat for 8-10 minutes until thick and syrupy, stirring occasionally.
  5. Preheat grill to medium-high heat (around 400°F / 200°C). Grill bacon-wrapped steak tips for 4-5 minutes per side, brushing generously with bourbon glaze after flipping.
  6. After the last flip, brush once more with glaze and grill for an additional minute per side. Remove from grill and let rest for 5 minutes.
  7. Remove skewers carefully and arrange on a platter. Spoon any extra glaze over the top before serving.

Notes

Partially cooking the bacon before wrapping prevents it from being chewy. Reduce the bourbon glaze slowly over medium heat to avoid burning. Rest steak tips after grilling to lock in juices. Soak skewers in water for 30 minutes to prevent burning. For indoor cooking, use a grill pan or bake at 425°F (220°C) on a wire rack for 15 minutes, flipping and glazing halfway.
