Refreshing Watermelon Mint Lime Slushie

A quick and easy homemade summer drink combining sweet watermelon, fresh mint, and tangy lime for a refreshing icy treat.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1012 fresh mint leaves
  • Juice of 2 medium limes (about 3 tablespoons)
  • 2 tablespoons agave syrup
  • 1.5 cups ice cubes
  • 1/4 cup cold water (optional)

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into cubes, removing any seeds if necessary. Keep it chilled for a colder slushie.
  2. Roll 2 medium limes on the countertop to loosen juice, then cut and squeeze to get about 3 tablespoons (45ml) of fresh lime juice. Set aside.
  3. Rinse 10-12 fresh mint leaves under cold water and pat dry gently. Remove any stems.
  4. In your blender, combine the watermelon cubes, fresh mint leaves, lime juice, 2 tablespoons (30ml) of agave syrup, and 1.5 cups (360ml) of ice cubes. Blend on high until the mixture is smooth and frosty. If the texture is too thick, add up to 1/4 cup (60ml) of cold water to loosen it.
  5. Taste and adjust sweetness if needed by adding more agave syrup or honey and blend briefly again. If too tart, add a pinch of salt to balance flavors.
  6. Pour the slushie into glasses and garnish with a sprig of fresh mint or a thin lime wheel. Serve immediately for best icy texture.

Notes

Use ripe watermelon for best sweetness. Keep ingredients cold to maintain icy texture. Pulse blend if blender tends to liquefy the mixture. Adjust sweetness gradually. Store leftovers in freezer and pulse blend before serving again.
