  • 2 packages instant ramen noodles (seasoning packets discarded)
  • 4 cups water
  • 2 tablespoons soy sauce (low-sodium if desired)
  • 1 teaspoon dark soy sauce (optional)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon brown sugar
  • 1 teaspoon rice vinegar
  • 68 cloves garlic, minced
  • 2 tablespoons chili crisp or chili oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 large egg (room temperature preferred)
  • 2 green onions, sliced (white and green parts separated)
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. Bring 4 cups of water to a rolling boil in a medium pot. Add both blocks of instant ramen noodles (discard seasoning packets). Cook for 2 minutes until just tender but still al dente. Drain immediately and rinse with cold water to stop cooking. Set aside.
  2. In a small bowl, whisk together soy sauce, dark soy sauce (if using), sesame oil, brown sugar, and rice vinegar until sugar dissolves. Set aside.
  3. Smash each garlic clove with the side of a knife, then mince finely. Slice green onions, separating white and green parts.
  4. Place a large skillet or wok over medium-high heat. Add 1 tablespoon neutral oil (vegetable or avocado) and swirl to coat. Heat until oil shimmers, about 30 seconds.
  5. Add minced garlic and white parts of green onions to hot oil. Stir constantly for 20-30 seconds until fragrant. Do not let garlic brown too much.
  6. Add chili crisp (or chili oil) and red pepper flakes if using. Stir for 10 seconds until oil turns deep red.
  7. Push garlic mixture to one side of skillet. Crack egg into empty space. Cook undisturbed for 20 seconds until white is mostly set but yolk is still runny. Gently break yolk and stir into garlic mixture to create a saucy base.
  8. Add drained noodles to skillet. Pour prepared sauce over top. Using tongs, toss vigorously for 1-2 minutes until noodles are evenly coated and heated through.
  9. Remove from heat. Taste and adjust seasoning if needed. Transfer to serving bowls. Top with sliced green parts of onions and sprinkle with toasted sesame seeds.
  10. Serve immediately while hot and silky.

Notes

Don’t overcook noodles in boiling step; they should be al dente. Rinse noodles with cold water after draining to remove excess starch and prevent clumping. Let egg set slightly before stirring to create a sauce-like consistency. Prep all ingredients before starting to cook as the process is fast. Best served immediately; leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a skillet with a splash of water or soy sauce.
