A simple, fast, and flavorful shrimp dish with a perfect balance of sweet, savory, and buttery sauce, paired with a fresh and tropical coconut lime cauliflower rice.

  • 1 pound large shrimp, peeled and deveined (fresh or thawed frozen)
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • Juice of 1 lime
  • 4 cups cauliflower rice (about 1 medium head cauliflower processed or pre-riced)
  • 1/2 cup full-fat coconut milk
  • 2 green onions, sliced thinly
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare cauliflower rice: Cut fresh cauliflower into florets and pulse in a food processor until texture resembles rice or grate with a box grater. Set aside.
  2. Cook cauliflower rice: Heat olive oil in a large skillet over medium heat. Add cauliflower rice and cook for 3 minutes, stirring often.
  3. Pour in coconut milk and stir well to combine. Cook for another 4-5 minutes until cauliflower is tender but not mushy.
  4. Season with salt, pepper, and juice of half a lime. Stir and keep warm.
  5. Prepare shrimp: Pat shrimp dry with paper towels to prevent steaming.
  6. Cook shrimp: In a separate large skillet, melt 2 tablespoons butter over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant, without browning.
  7. Add shrimp in a single layer, season lightly with salt and pepper, and cook 2 minutes per side until pink and opaque.
  8. Add sauce: Lower heat to medium and add honey and soy sauce. Stir well and let sauce simmer gently for 1-2 minutes until it thickens slightly and coats the shrimp.
  9. Finish with butter and lime: Stir in remaining 1 tablespoon butter and juice of the other half lime. Toss shrimp gently to coat.
  10. Plate and garnish: Serve shrimp over warm coconut lime cauliflower rice. Sprinkle sliced green onions on top.

Notes

Do not overcook shrimp to avoid rubbery texture. Add honey after garlic softens but before it browns to prevent burning and keep sauce glossy. If sauce thickens too much, add a teaspoon or two of water to loosen. Pat shrimp dry thoroughly before cooking to get a good sear. Cook cauliflower rice gently to avoid mushiness.
