  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/3 cup (65 g) granulated sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 2 cups (300 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries
  • 1 cup (150 g) fresh raspberries (optional)
  • 1012 graham crackers, crushed (or digestive biscuits as a substitute)
  • 2 tbsp (30 g) melted butter
  • 1 cup (240 ml) sparkling water or lemon-lime soda

Instructions

  1. Prepare the Graham Cracker Base (5 minutes): Crush the graham crackers finely using a food processor or by placing them in a sealed plastic bag and rolling over with a rolling pin. Mix the crumbs with melted butter until they resemble wet sand. Set aside.
  2. Make the Cheesecake Layer (10 minutes): In a large bowl, beat the softened cream cheese with the granulated sugar, vanilla extract, and lemon zest until smooth and creamy. In a separate chilled bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, careful not to deflate the air you just beat in. The texture should be light and fluffy, almost mousse-like.
  3. Prep the Fruit (5 minutes): Rinse and hull the strawberries, then slice them. Rinse blueberries and raspberries and pat dry.
  4. Assemble the Trifle (5 minutes): Start by spreading a layer of the graham cracker crumbs at the bottom of your serving bowl. Next, add a layer of cheesecake mixture, smoothing it out evenly. Spoon a layer of mixed berries on top, then drizzle a few tablespoons of sparkling water or lemon-lime soda over the fruit. Repeat layering until you fill the bowl, finishing with a berry topping and a light sprinkle of crumbs for crunch.
  5. Chill and Serve: Refrigerate the trifle for at least 2 hours to let the flavors meld. Serve cold.

Notes

Add sparkling water just before serving to keep the fizz. Do not overwhip the cream to avoid grainy texture. Lemon zest is essential for bright flavor. For vegan or dairy-free versions, substitute heavy cream with coconut cream and use dairy-free cream cheese. For gluten-free, use gluten-free cookies or crushed nuts instead of graham crackers.
