Ingredients

Scale
  • 1 box yellow or vanilla cake mix (about 15.25 oz / 432 g)
  • 1 cup water (240 ml)
  • 1/3 cup vegetable oil (80 ml)
  • 3 large eggs, room temperature
  • 4 oz (115 g) cream cheese, softened
  • 12 oz (340 g) red candy melts or red almond bark
  • 1 tsp green apple flavoring or green apple extract
  • 1 tbsp vegetable shortening (optional)
  • Edible gold luster dust or gold food coloring mixed with clear vanilla extract for splattering
  • Black edible marker or thin black icing pen (optional)
  • Wooden cake pop sticks or sturdy lollipop sticks

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake mix according to package instructions by mixing cake mix, water, vegetable oil, and eggs until smooth.
  2. Pour batter into a greased or parchment-lined 9×13 inch baking pan. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean. Let cool completely on a wire rack.
  3. Crumble cooled cake into a large mixing bowl until fine but not powdery.
  4. Add softened cream cheese to cake crumbs and mix until moist and holds together when pressed. Add more cream cheese if too dry.
  5. Scoop about 1.5 tablespoons of mixture and roll into smooth balls. Place on parchment-lined baking sheet. Chill in fridge for at least 1 hour or freeze for 15-20 minutes.
  6. Melt red candy melts in microwave-safe bowl in 30-second bursts, stirring between each. Add green apple flavoring and vegetable shortening; stir until smooth and glossy.
  7. Dip chilled cake balls into melted candy coating, using a spoon if needed to cover completely. Let excess drip off, then insert stick into coated cake ball.
  8. Stand cake pops upright in styrofoam block or cake pop stand. Let coating set at room temperature or refrigerate for quicker setting.
  9. Mix edible gold luster dust with clear vanilla extract to create paint-like consistency. Use small paintbrush or toothbrush to flick gold splatter onto dried cake pops. Let dry completely.
  10. Optionally, use black edible marker or thin icing pen to draw stems or leaves near the stick for decoration.

Notes

Avoid dipping cake balls if too warm to prevent crumbling. Use green apple flavoring for the signature tangy taste. Heat candy melts in short bursts and stir often to avoid burning. Chill cake balls well before dipping for best results. Keep brush dry when applying gold splatter. Cake balls can be made a day ahead and chilled before dipping.
