  • ½ cup (113 grams) unsalted butter, softened
  • 4 cups (480 grams) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Fresh strawberries, sliced thin
  • Fresh blueberries
  • Optional: fresh raspberries or blackberries for extra texture

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line them with parchment paper.
  2. In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  3. Using a stand or electric mixer on medium speed, beat the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Reduce mixer speed to low and alternately add the flour mixture and milk in three parts, beginning and ending with flour. Mix just until combined.
  6. Pour the batter evenly into the prepared pans. Smooth the tops with a spatula.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the pans cool on a wire rack for 10 minutes, then run a knife around the edges and invert onto racks to cool completely before frosting.
  9. Beat the softened cream cheese and butter together until creamy and smooth. Gradually add powdered sugar and vanilla, mixing well after each addition until fluffy but spreadable.
  10. Place one cake layer on your serving plate. Spread a thick, even layer of frosting on top.
  11. Place the second cake layer on top and cover the entire cake with a thin crumb coat of frosting. Chill for 15 minutes to set.
  12. Apply a generous layer of cream cheese frosting all over the cake, smoothing it out.
  13. Arrange sliced strawberries in horizontal stripes across the cake’s surface.
  14. In the top left corner, place a rectangle of blueberries to mimic the star section.
  15. Fill in any gaps with more berries for a full, vibrant look.

Notes

Use softened butter and cream cheese for smooth frosting. Do not overmix the batter to keep the cake tender. Use fresh berries for decoration to avoid sogginess. Chill the cake after crumb coating for easier frosting application. Bake cake layers a day ahead if desired and add fresh berries just before serving.
