  • 1 tablespoon ground flaxseed
  • 3 tablespoons warm water
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar (100g)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup vegetable oil (60ml)
  • ½ cup non-dairy milk (120ml), unsweetened almond or oat milk
  • ¾ cup vegan chocolate chips (130g)

Instructions

  1. Prepare the flax egg: In a small bowl, combine 1 tablespoon ground flaxseed with 3 tablespoons warm water. Stir well and let sit for 5-7 minutes until gel-like.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth with some small chunks remaining.
  4. Add the flax egg, vegetable oil, non-dairy milk, maple syrup, and vanilla extract to the mashed bananas. Whisk gently until combined.
  5. In another bowl, sift together the flour, baking soda, baking powder, salt, and brown sugar.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  7. Fold in ¾ cup vegan chocolate chips, reserving a small handful to sprinkle on top.
  8. Pour batter into the prepared loaf pan and smooth the top. Sprinkle remaining chocolate chips on top.
  9. Bake for 50-60 minutes, checking at 50 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  10. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Let the flax egg sit for at least 5 minutes to thicken properly. Avoid overmixing the batter to keep the bread tender. If the top browns too quickly, cover loosely with foil halfway through baking. Use very ripe bananas for best sweetness and moisture. For gluten-free option, substitute flour with a gluten-free blend and adjust baking time.
