  • 1 ½ cups (150g) oat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature
  • ¼ cup (60ml) maple syrup
  • 1 teaspoon vanilla extract
  • 6 tablespoons (85g) unsalted butter, melted (or coconut oil for dairy-free)
  • ¾ cup (130g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with a few small chunks remaining.
  3. Add the eggs, maple syrup, melted butter, and vanilla extract to the mashed bananas. Whisk until well combined and slightly frothy.
  4. In a separate bowl, whisk together the oat flour, baking soda, salt, and ground cinnamon.
  5. Gradually fold the dry ingredients into the wet banana mixture until just combined. Avoid overmixing.
  6. Fold in the chocolate chips evenly.
  7. Pour the batter into the prepared loaf pan, filling it about ¾ full. Smooth the top with a spatula.
  8. Bake for 50-60 minutes, checking doneness with a toothpick inserted in the center. It should come out clean or with a few moist crumbs.
  9. If the top browns too quickly, tent loosely with foil after 40 minutes.
  10. Cool the loaf in the pan on a wire rack for 20 minutes before removing to cool completely.

Use very ripe bananas for best flavor and moisture. Avoid overmixing the batter to keep the bread tender. Let the bread cool completely before slicing to prevent crumbling. For dairy-free, substitute butter with melted coconut oil and use dairy-free chocolate chips. You can also chill the batter for 15 minutes to improve texture. If baking in muffin tins, reduce baking time by 10-15 minutes.
