  • 4 cups water
  • 1 cup raw honey
  • 1-inch piece fresh ginger, sliced
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 pod star anise (optional)

Instructions

  1. Combine the dried elderberries, water, sliced ginger, cinnamon sticks, cloves, and star anise (if using) in a medium saucepan. Stir briefly.
  2. Bring to a rolling boil over high heat, then reduce heat to low and simmer uncovered for 30-40 minutes, until the liquid is reduced by about half and the berries are plump and faded.
  3. Optional: Gently mash the berries against the side of the pot with a wooden spoon to release more flavor.
  4. Strain the liquid through a fine-mesh strainer or cheesecloth into a large bowl or heatproof measuring cup. Let it drain completely without pressing too hard on the berries.
  5. Let the strained liquid cool for 10-15 minutes until warm, not hot.
  6. Pour the honey into the warm liquid and stir gently until fully dissolved. Taste and adjust sweetness if desired.
  7. Pour the syrup into a clean glass jar using a funnel. Screw the lid on tightly and let cool completely to room temperature before refrigerating.

Notes

Do not add honey while the liquid is boiling; it can damage the beneficial properties of raw honey. For a clearer syrup, strain twice. Store in the refrigerator for up to 2-3 months. Freeze in ice cube trays for longer storage. Not suitable for infants under 1 year old due to honey.
