A fresh and wholesome twist on the classic Caprese salad using juicy nectarines, creamy mozzarella, and fragrant basil, perfect for a light and satisfying meal.

Ingredients

  • 34 ripe nectarines, sliced
  • 8 oz fresh mozzarella, sliced or torn into bite-sized pieces
  • 1 cup fresh basil leaves, loosely packed
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar or balsamic glaze
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Wash and dry nectarines and basil leaves thoroughly.
  2. Slice nectarines into thin wedges about 1/4 inch thick.
  3. Slice or tear mozzarella into bite-sized pieces.
  4. Arrange nectarines, mozzarella, and basil leaves alternately on a serving platter.
  5. In a small bowl, whisk together olive oil, balsamic vinegar or glaze, salt, and black pepper.
  6. Lightly drizzle the dressing over the salad.
  7. Garnish with a few whole basil leaves and optionally sprinkle flaky sea salt or crushed red pepper flakes.
  8. Serve immediately for best freshness.

Notes

Use ripe but firm nectarines to avoid mushiness. Add dressing just before serving to prevent sogginess. For dairy-free options, substitute mozzarella with vegan cheese or omit and add toasted pine nuts. Aged balsamic vinegar or glaze enhances flavor. Avoid overdressing the salad.
