  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup crumbled feta cheese
  • ½ cup fresh mint leaves, roughly chopped
  • Juice of 2 medium limes (about 3 tablespoons)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • Pinch of salt, to taste
  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into bite-sized cubes using a sharp knife. Place in a mixing bowl.
  2. Roughly chop ½ cup (about 10g) of fresh mint leaves.
  3. In a small bowl or jar, whisk together the juice of 2 medium limes (about 3 tablespoons), 2 tablespoons extra-virgin olive oil, 1 teaspoon honey, a pinch of salt, and ¼ teaspoon freshly cracked black pepper until emulsified. Adjust sweetness or acidity to taste.
  4. Add the crumbled feta and chopped mint to the watermelon cubes. Pour the dressing over and gently toss to combine, being careful not to break the watermelon pieces.
  5. Chill the salad in the refrigerator for about 10 minutes before serving to let flavors meld. Serve fresh.

Notes

Use fresh lime juice for best flavor. Cut watermelon into roughly 1-inch cubes to maintain texture. Crumble feta just before tossing to avoid sogginess. Toss gently to prevent watermelon from breaking. Add dressing just before serving if prepping ahead to keep salad fresh.
