A simple, tangy, and crunchy cucumber relish made without added sugar, perfect as a versatile condiment for summer meals and BBQs.

  • 3 medium cucumbers, thinly sliced (preferably pickling cucumbers)
  • 1 small onion, finely chopped (yellow or white)
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds (optional)
  • A pinch of turmeric powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • A few grinds of freshly cracked black pepper

Instructions

  1. Wash and slice cucumbers thinly (about 1/8 inch or 3 mm thick). Set aside.
  2. Finely dice 1 small onion.
  3. In a separate bowl, combine apple cider vinegar, water, mustard seeds, celery seeds, turmeric powder, salt, and black pepper. Stir well to dissolve salt and distribute spices.
  4. Pour the vinegar mixture over the cucumbers and onions. Stir gently with a wooden spoon to coat evenly without crushing the slices.
  5. Cover the bowl with a clean kitchen towel or plastic wrap and let the relish sit at room temperature for about 30 minutes to allow flavors to marry and cucumbers to soften slightly.
  6. Transfer the relish to a glass jar or airtight container and refrigerate for at least 2 hours before serving (best after overnight).
  7. Before serving, stir and adjust seasoning if needed.

Notes

If cucumbers are too watery, sprinkle with salt and drain in a colander for 15 minutes before mixing to avoid sogginess. Toast mustard seeds lightly in a dry pan for 30 seconds for a nuttier flavor. Letting the relish rest overnight intensifies flavors. Adjust salt and vinegar to taste before serving.
