Light, fresh, and satisfying lemon herb chicken wrapped in crisp lettuce leaves, perfect for a quick low-carb meal.

  • 1 lb boneless, skinless chicken breasts, thinly sliced or chopped
  • Juice and zest of 1 large lemon
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh thyme, chopped (or rosemary as an alternative)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter, softened
  • Salt and pepper, to taste
  • 8 large romaine or butter lettuce leaves, washed and dried
  • Optional toppings: sliced avocado, thinly sliced radishes, crumbled feta cheese

Instructions

  1. Slice chicken breasts into thin strips or bite-sized pieces (about 5 minutes).
  2. In a medium bowl, combine lemon juice and zest, olive oil, minced garlic, chopped parsley and thyme, salt, and pepper. Toss chicken in marinade until well coated. Marinate at least 10 minutes if possible.
  3. Heat a 10-inch non-stick skillet over medium heat. Add butter and let melt.
  4. Add marinated chicken in a single layer. Cook undisturbed for 3-4 minutes to sear, then toss and cook another 3-4 minutes until fully cooked and no longer pink.
  5. Taste and adjust seasoning with salt, pepper, or a squeeze of fresh lemon juice.
  6. While chicken cooks, rinse and dry lettuce leaves thoroughly.
  7. Spoon warm chicken onto each lettuce leaf. Add optional toppings if desired.
  8. Fold or roll wraps gently and serve immediately for best crispness.

Notes

If chicken starts to dry out, add a splash of water or broth and cover briefly to keep juicy. Marinate up to 30 minutes for deeper flavor. Use fresh herbs for best taste; dried herbs can be substituted at one-third the amount. Keep lettuce dry to avoid sogginess. Store cooked chicken and lettuce separately if prepping ahead.
