Fresh Healthy Peach Salsa Recipe with Jalapeño and Cilantro

A quick and easy fresh peach salsa combining juicy peaches, spicy jalapeño, and fresh cilantro, perfect for summer snacks and meals.

Ingredients

  • 3 medium-sized ripe peaches, peeled and diced
  • 1 medium jalapeño pepper, seeded and finely chopped
  • ½ cup fresh cilantro leaves, chopped
  • ½ small red onion, finely diced
  • Juice of 1 fresh lime (about 2 tablespoons)
  • ¼ teaspoon salt, or to taste
  • A pinch of freshly ground black pepper (optional)
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Wash and peel the peaches if preferred, then dice into ½ inch cubes.
  2. Slice the jalapeño in half lengthwise, remove seeds and membranes for less heat, then finely dice.
  3. Peel and finely dice half a small red onion.
  4. Remove thick stems and roughly chop cilantro leaves to fill ½ cup.
  5. In a medium mixing bowl, gently fold together the diced peaches, jalapeño, onion, and cilantro without mashing the peaches.
  6. Add lime juice, salt, and black pepper to the mixture and toss gently to combine.
  7. Optionally, drizzle 1 tablespoon of extra virgin olive oil and stir gently to add silkiness.
  8. Let the salsa rest at room temperature for 10-15 minutes before serving to allow flavors to meld.

Notes

Use firm but ripe peaches for best texture. Adjust jalapeño heat by including or removing seeds. Let salsa rest before serving for better flavor. Can be made up to 24 hours ahead and refrigerated. Avoid watery salsa by draining excess peach juice if needed.
