A vibrant and smoky summer salsa featuring charred corn, black beans, fresh tomatoes, and a hint of lime. Perfect as a dip or topping for grilled dishes.

  • 4 ears fresh corn on the cob, husked
  • 1 can black beans, drained and rinsed (about 15 oz)
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, finely diced
  • ¼ cup fresh cilantro, chopped (or parsley as a substitute)
  • 1 small jalapeño, seeded and finely minced
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F).
  2. Husk the ears of corn and remove all silk. Lightly brush each ear with olive oil.
  3. Grill the corn directly on the grill for 10-12 minutes, turning every 2-3 minutes until golden brown with some charred spots.
  4. Allow the corn to cool slightly, then slice the kernels off the cob using a sharp knife, keeping kernels intact.
  5. In a medium mixing bowl, combine the grilled corn kernels, rinsed black beans, halved cherry tomatoes, diced red onion, chopped cilantro, and minced jalapeño.
  6. Drizzle the olive oil and freshly squeezed lime juice over the mixture. Sprinkle with ground cumin, salt, and black pepper.
  7. Gently toss the salsa with a spoon or spatula until just combined, being careful not to mash the beans or tomatoes.
  8. Taste and adjust seasoning with additional salt, lime juice, or jalapeño as desired.
  9. Serve immediately or refrigerate for 30 minutes to let flavors meld. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Brush corn lightly with oil to prevent sticking and achieve even char. Turn corn frequently while grilling. Slice kernels off warm corn for juicier texture. Adjust jalapeño amount for desired heat.
