  • 23 English cucumbers, sliced into 1/4-inch rounds
  • 1/2 cup (120g) hummus
  • 1/2 cup (about 50g) sun-dried tomatoes, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice, plus extra for seasoning
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: chopped parsley or basil for garnish

Instructions

  1. Wash and dry the cucumbers. Slice into 1/4-inch (6 mm) thick rounds, aiming for uniform size.
  2. If using dry-packed sun-dried tomatoes, soak them in warm water for 10 minutes, then pat dry.
  3. Finely chop the sun-dried tomatoes and toss with olive oil, lemon juice, salt, and pepper. Let sit for about 5 minutes.
  4. In a small bowl, stir the hummus with a teaspoon of lemon juice and a pinch of salt to brighten the flavor.
  5. Spread about 1 teaspoon of hummus evenly over each cucumber slice.
  6. Top each slice with a small spoonful of the sun-dried tomato mixture.
  7. Optionally, garnish with finely chopped parsley or basil.
  8. Serve immediately for best crispness. If prepping ahead, keep cucumber slices and tomato topping separate and assemble just before serving.
