Fresh Cowboy Caviar Dip Recipe Easy Homemade Black Bean and Corn Dip

A fresh, colorful, and flavorful black bean and corn dip that’s quick and easy to prepare, perfect for barbecues, potlucks, or snacks.

  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Optional: 1 avocado, diced

Instructions

  1. Rinse and drain the canned black beans thoroughly to avoid any excess liquid. If using frozen corn, no need to thaw—just measure it out. Rinse the cherry tomatoes and cut them in half. Dice the red bell pepper and finely chop the red onion and jalapeño (if using). Chop the fresh cilantro and set everything aside. (About 10 minutes)
  2. In a large mixing bowl, combine the black beans, corn, tomatoes, bell pepper, onion, jalapeño, and cilantro. Gently toss to mix.
  3. In a small bowl, whisk together the freshly squeezed lime juice, extra virgin olive oil, ground cumin, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  4. Pour the dressing over the mixed veggies and beans, folding gently to coat everything evenly. Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld. (Minimum 15 minutes if short on time)
  5. Just before serving, give the dip a quick stir and taste again. Add diced avocado now if using, folding it in gently.

Notes

Do not skip rinsing canned beans to avoid tinny flavor. Chop ingredients uniformly for best texture. Chill dip to allow flavors to meld. Add avocado just before serving to prevent browning. Adjust lime juice gradually to avoid overpowering acidity.
