  • 8 ounces (225 grams) fresh mozzarella pearls (bocconcini)
  • 1 small bunch (about 20 leaves) fresh basil leaves
  • ½ cup (120 ml) balsamic vinegar
  • 2 tablespoons (25 grams) brown sugar or honey
  • 2 tablespoons (30 ml) extra virgin olive oil (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2025 wooden skewers or toothpicks

Instructions

  1. Make the Sweet Balsamic Glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan. Add 2 tablespoons (25 grams) brown sugar or honey. Heat over medium heat, stirring occasionally. Let it simmer gently until the liquid reduces by half and thickens to a syrupy consistency, about 10-15 minutes. Remove from heat and let cool.
  2. Prep the Ingredients: Rinse and dry the cherry tomatoes and basil leaves. Drain the mozzarella pearls well and pat dry if needed.
  3. Assemble the Skewers: Thread one cherry tomato, a folded basil leaf, and a mozzarella pearl onto each skewer. Repeat 2-3 sets per skewer or until full.
  4. Season the Skewers: Arrange skewers on a serving platter. Lightly sprinkle with sea salt and freshly ground black pepper. Optionally, drizzle with extra virgin olive oil.
  5. Drizzle the Glaze: Spoon or squeeze the cooled balsamic glaze generously over the skewers.
  6. Final Touch: Let the skewers sit for about 5 minutes at room temperature to allow flavors to meld before serving.

Notes

Make sure to drain and pat dry mozzarella pearls to avoid sogginess. Simmer balsamic glaze low and slow to prevent burning. Let skewers rest 5 minutes before serving for best flavor. Store glaze separately to keep skewers fresh.
