  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (120 ml) buttermilk
  • 1 1/2 cups (225 g) fresh peaches, peeled and diced
  • For the Cinnamon Streusel Topping:
  • 1/2 cup (60 g) all-purpose flour
  • 1/3 cup (70 g) brown sugar, packed
  • 1 teaspoon (2.6 g) ground cinnamon
  • 4 tablespoons (57 g) unsalted butter, cold and cubed
  • Optional: 1/4 cup (25 g) chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. Prepare the streusel topping: In a medium bowl, mix 1/2 cup flour, 1/3 cup brown sugar, and 1 teaspoon cinnamon. Add cold cubed butter and blend with fingers or pastry cutter until coarse crumbs form. Stir in nuts if using. Refrigerate until ready to use.
  3. Mix dry ingredients for muffins: In a large bowl, whisk together 2 cups sifted flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet ingredients: In another bowl, beat melted butter with granulated sugar and brown sugar until smooth. Add eggs one at a time, beating well after each. Stir in vanilla extract and buttermilk.
  5. Fold wet ingredients into dry ingredients gently until just combined; batter will be thick and lumpy.
  6. Carefully fold in diced peaches, being gentle to avoid breaking them down.
  7. Fill muffin cups about 2/3 full with batter. Sprinkle chilled cinnamon streusel topping generously over each muffin.
  8. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean or with a few moist crumbs. Tent with foil if streusel browns too quickly.
  9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe but firm peaches to avoid soggy muffins. Toss diced peaches in a tablespoon of flour if extra juicy. Do not overmix batter to keep muffins light and fluffy. Chill streusel topping before baking for crisp texture. Room temperature eggs and dairy improve mixing and rise.
