  • 68 medium fresh jalapeño peppers, sliced into 1/4-inch rings
  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • 2 tablespoons granulated sugar
  • 1 tablespoon salt
  • 2 garlic cloves, smashed
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 bay leaf

Instructions

  1. Wash and dry jalapeños. Remove stems and slice into 1/4-inch rings. Remove seeds and membranes to reduce heat if desired.
  2. In a medium saucepan, combine white vinegar, water, sugar, salt, smashed garlic cloves, black peppercorns, mustard seeds, and bay leaf. Stir gently to mix.
  3. Heat the mixture over medium heat until it gently boils, stirring occasionally to dissolve sugar and salt. Boil for about 5 minutes, then reduce heat and simmer for 2 more minutes.
  4. Pack the sliced jalapeño rings tightly but without crushing into a clean glass jar or heatproof container.
  5. Pour the hot pickling liquid over the jalapeños until fully submerged. Press down gently if needed to cover all peppers.
  6. Let the jar cool uncovered at room temperature for about 30 minutes, then seal with a lid and refrigerate.
  7. Allow to rest for at least 2 hours before eating, though flavors develop best after 24 hours. Store refrigerated and consume within 3 weeks.

Notes

For less heat, remove seeds and membranes before slicing. Use filtered water for crisper texture. Avoid over-packing the jar to maintain crunch. Let pickles rest overnight for best flavor. Refrigerate at all times as these are quick pickles, not shelf-stable.
