  • 8 oz smoked Gouda cheese, shredded
  • 6 oz fresh Mexican style chorizo
  • 2 medium jalapeños
  • ¼ cup white onion, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped (optional)
  • ½ lime, fresh lime juice
  • Tortilla chips or warm flour tortillas for serving

Instructions

  1. Preheat your broiler to high and set your oven rack about 6 inches from the heat source.
  2. Char the jalapeños by placing them directly on a gas burner flame or under the broiler, turning occasionally until blackened all over (about 5 minutes). Transfer to a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the charred skin, remove seeds if desired, and chop roughly.
  3. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chorizo, breaking it up with a spatula, and cook for 5–7 minutes until browned and cooked through. Remove excess grease if needed.
  4. Add diced onion and garlic to the chorizo and cook another 3–4 minutes until softened and fragrant. Stir in the chopped charred jalapeños and cook an additional 2 minutes.
  5. Lower heat to medium-low. Spread the shredded smoked Gouda evenly over the chorizo mixture in the skillet. Let it melt gently for about 3–5 minutes without stirring.
  6. Carefully transfer the skillet to the preheated broiler. Broil for 2–3 minutes until the cheese is bubbly and golden on top. Watch closely to prevent burning.
  7. Remove from oven, squeeze fresh lime juice over the top, and sprinkle with chopped cilantro. Serve immediately with tortilla chips or warm tortillas.

Notes

Use fresh chorizo for best texture and flavor. Char jalapeños properly for smoky depth. Broiling creates a golden bubbly top. If skillet is not oven-safe, transfer mixture to a baking dish before broiling. For dairy-free, substitute smoked vegan cheese but texture will vary. Leftovers keep well refrigerated for up to 3 days; reheat gently to avoid rubbery cheese.
