  • 2 cups (450g) pulled pork, slow-cooked and seasoned
  • 1 cup (110g) sharp cheddar cheese, shredded
  • 1 cup (110g) Monterey Jack cheese, shredded
  • ½ cup (60g) queso fresco, crumbled
  • 1 cup black beans, drained and rinsed
  • 23 jalapeños, thinly sliced (fresh or pickled, optional)
  • ¼ cup (about 40g) red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • Sour cream, for topping
  • Lime wedges, for serving
  • Spices for pork: 1 tsp smoked paprika, 1 tsp cumin, ½ tsp garlic powder, ½ tsp salt, ¼ tsp pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using leftover pork, shred it finely. Toss the pork with smoked paprika, cumin, garlic powder, salt, and pepper in a bowl to coat evenly.
  3. Spread a single layer of tortilla chips evenly on a large rimmed sheet pan (about 18 x 13 inches). Avoid overlapping too much to keep chips crispy.
  4. Sprinkle black beans and diced red onion evenly over the chips.
  5. Distribute the seasoned pulled pork evenly across the chips.
  6. Sprinkle shredded sharp cheddar and Monterey Jack cheeses over the pork and chips.
  7. Bake in the oven for 10-12 minutes, or until the cheese has melted and the edges of the chips are crisp and golden.
  8. Remove from oven and top with crumbled queso fresco and sliced jalapeños.
  9. Optional: Broil for 1-2 minutes on high for extra golden cheese and slight char, watching closely to avoid burning.
  10. Garnish with chopped cilantro, add dollops of sour cream, and serve with lime wedges on the side.
