  • 23 medium Hatch green chiles, roasted, peeled, and chopped (fresh or frozen)
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 4 slices sharp cheddar or pepper jack cheese (optional)
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons sour cream
  • Juice of half a lime
  • 1 small clove garlic, minced
  • 4 soft burger buns (brioche or potato buns recommended)
  • 1 tablespoon butter (for toasting buns)
  • Optional toppings: sliced red onions, lettuce, tomato

Instructions

  1. Roast the Hatch green chiles for 15-20 minutes over a grill, broiler, or gas stove flame until skins are blistered and blackened. Transfer to a bowl and cover to steam for 10 minutes.
  2. Peel and chop the chiles, removing seeds if less heat is desired.
  3. Prepare the avocado crema by mashing avocado with sour cream, lime juice, minced garlic, and a pinch of salt until creamy but slightly chunky. Refrigerate until ready to use.
  4. In a large bowl, gently mix ground beef with chopped Hatch chiles. Season with kosher salt and freshly cracked black pepper.
  5. Preheat a cast iron skillet or heavy griddle over medium-high heat until very hot.
  6. Divide the beef mixture into 4 equal balls (~4 ounces each). Place each ball on the skillet and immediately smash down firmly with a metal spatula to form thin patties. Cook undisturbed for 2-3 minutes until edges are brown and crispy.
  7. Flip each patty carefully, add a slice of cheese if using, and cook for another 1-2 minutes until cheese melts and patties are cooked through.
  8. While patties finish cooking, spread butter on buns and toast in a separate pan or the same skillet until golden.
  9. Assemble burgers by spreading a generous layer of avocado crema on the bottom bun, adding the patty, topping with optional sliced onions or lettuce, and capping with the top bun.

Notes

Do not overwork the meat to keep patties tender. Smash patties hard and fast on a very hot skillet for crispy edges. Let patties rest a minute before assembling. Steam chiles after roasting to ease peeling. For dairy-free crema, substitute sour cream with Greek yogurt or plant-based alternative. Use gluten-free buns or lettuce wraps for gluten-free option.
