  • 2 fresh jalapeños, seeded and finely chopped
  • ½ cup unsalted butter, softened (for honey butter)
  • 3 tablespoons honey
  • Pinch of sea salt (for honey butter)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and kosher salt.
  3. In a separate bowl, beat eggs until smooth. Stir in buttermilk, sour cream, and melted butter.
  4. Fold in shredded cheddar cheese and chopped jalapeños.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined; do not overmix.
  6. Spoon batter into muffin tin cups about ¾ full.
  7. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
  8. While baking, beat softened butter with honey and sea salt until creamy to make honey butter.
