  • 1 lb (450g) ground beef (80/20 blend)
  • 23 medium-sized Hatch green chilis (fresh or roasted)
  • 4 slices Pepper Jack cheese
  • 2 soft burger buns (potato or brioche preferred)
  • Salt, 1 teaspoon
  • Freshly ground black pepper, ½ teaspoon
  • 2 tablespoons mayonnaise (optional)
  • 1 tablespoon unsalted butter, softened
  • Pickles or fresh lettuce and tomato (optional)

Instructions

  1. Preheat your cast iron skillet or heavy-duty griddle over medium-high heat for about 5 minutes until hot.
  2. In a mixing bowl, gently break apart the ground beef without overworking it. Season with salt and black pepper.
  3. Divide the beef into 4 equal-sized balls (about 4 oz or 115g each) without packing tightly.
  4. Spread softened butter on the cut sides of the buns and toast them face down on the skillet for 1-2 minutes until golden and crisp. Remove and set aside.
  5. Place two beef balls in the skillet with space between them. Using a metal spatula, press down firmly on each ball until about ¼-inch (6 mm) thick. Hold for 10 seconds to set the crust.
  6. Cook patties undisturbed for 2-3 minutes until edges brown and crisp. Flip carefully; add a slice of Pepper Jack cheese on each patty immediately after flipping.
  7. Scatter about 2 tablespoons of chopped roasted Hatch green chilis onto each cheese-covered patty. Cook another 2 minutes until cheese melts and chilis warm through.
  8. Spread mayonnaise on the bottom bun, place the cheesy patty with chilis on top, add pickles or lettuce if desired, and cover with the top bun.
  9. Serve immediately while hot and enjoy the melty cheese and crispy crust.

Notes

Use a hot skillet and press patties firmly for at least 10 seconds to get a crispy crust. Avoid pressing patties after flipping to keep them juicy. Toast buns with butter for added crunch. Hatch chilis can be fresh, roasted, jarred, or frozen (thawed and drained).
