  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk (or dairy-free milk like almond or oat)
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey or maple syrup
  • 1 cup Hatch green chilis, roasted and chopped (fresh or jarred)
  • 1 cup sharp cheddar cheese, shredded
  • 1 small jalapeño, finely diced (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C). Place cast iron skillet inside to warm for about 10 minutes.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In a medium bowl, beat eggs until frothy. Stir in milk, melted butter, and honey.
  4. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined; some lumps are okay.
  5. Fold in shredded cheddar, chopped Hatch green chilis, diced jalapeño if using, and sliced green onions evenly.
  6. Carefully remove hot skillet from oven and grease lightly with butter or oil. Pour batter into skillet and spread evenly.
  7. Bake for 20-25 minutes until edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Let cornbread rest for at least 5 minutes before slicing and serving.
