Flavorful Grilled Peaches Recipe with Vanilla Ice Cream and Easy Caramel Topping

A simple and delicious summer dessert featuring smoky grilled peaches topped with creamy vanilla ice cream and homemade caramel sauce.

  • 4 large ripe peaches, halved and pitted
  • 2 cups vanilla ice cream
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter
  • ½ cup packed brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of flaky sea salt

Instructions

  1. Rinse peaches and slice in half, removing pits. Toss peach halves lightly with 1 tablespoon granulated sugar and let sit for 5 minutes.
  2. Preheat grill to medium-high heat (375–400°F). If using a grill pan, heat on medium-high for about 5 minutes.
  3. Brush cut sides of peaches with melted unsalted butter.
  4. Place peaches cut-side down on grill. Grill for 3-4 minutes without moving to develop char marks. Flip and grill skin side for 2-3 minutes until tender but still holding shape.
  5. While peaches grill, melt 2 tablespoons unsalted butter in a small saucepan over medium heat. Stir in ½ cup packed brown sugar and cook for about 2 minutes until bubbling.
  6. Remove from heat and slowly whisk in ¼ cup heavy cream and 1 teaspoon vanilla extract until smooth. Add a pinch of salt to balance sweetness.
  7. Serve grilled peaches warm topped with a scoop of vanilla ice cream and drizzle with warm caramel sauce. Optionally sprinkle flaky sea salt over the caramel.

Notes

Use firm, ripe peaches to avoid mushiness. Brush peaches with butter to prevent sticking. Caramel sauce can be made ahead and reheated gently. For dairy-free, substitute coconut oil for butter and coconut milk-based ice cream.
