Flavorful Burrata Pasta Recipe with Oven-Blistered Cherry Tomatoes and Calabrian Chili Oil for Easy Homemade Dinner

A quick and easy pasta dish featuring blistered cherry tomatoes, creamy burrata, and smoky Calabrian chili oil, perfect for an impressive yet simple homemade dinner.

  • 12 oz (340 g) spaghetti or linguine
  • 2 cups (about 300 g) whole cherry tomatoes
  • 3 tbsp extra virgin olive oil, plus more for drizzling
  • 2 tbsp Calabrian chili oil
  • 3 cloves garlic, thinly sliced
  • A handful fresh basil, torn
  • 8 oz (225 g) burrata cheese
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Grated Parmesan for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Toss 2 cups of whole cherry tomatoes with 2 tablespoons of extra virgin olive oil and a pinch of salt. Spread them evenly on the baking sheet.
  3. Roast the tomatoes for 15-20 minutes until the skins are blistered and starting to wrinkle but not burnt.
  4. While tomatoes roast, bring a large pot of salted water to a boil.
  5. Add 12 oz (340 g) spaghetti and cook until al dente, about 8-9 minutes.
  6. Reserve 1 cup (240 ml) of pasta cooking water, then drain the pasta and set aside.
  7. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  8. Add thinly sliced garlic and sauté gently until fragrant and golden, about 1-2 minutes.
  9. Add the roasted cherry tomatoes with their juices to the skillet and stir gently to combine and warm through.
  10. Add the drained pasta to the skillet and toss with the tomatoes and garlic.
  11. Slowly add reserved pasta water, a little at a time, stirring constantly to create a silky sauce that clings to the pasta (use about ½ to ¾ cup).
  12. Drizzle 2 tablespoons of Calabrian chili oil over the pasta and toss again to evenly distribute the heat.
  13. Taste and season with salt and black pepper.
  14. Remove from heat and gently tear fresh basil leaves over the pasta, tossing lightly to combine.
  15. Plate the pasta and top each serving with a generous ball of burrata cheese (about 2 oz/60 g per serving).
  16. Optionally, sprinkle with grated Parmesan and a pinch of red pepper flakes. Serve immediately.

Notes

Roast cherry tomatoes at high heat to caramelize sugars without drying them out. Add chili oil gradually to balance spice. Reserve pasta water to create a silky sauce. Use fresh burrata for best melt. Burrata and Parmesan can be substituted for vegan alternatives to make the dish vegan.
