Easy Small-Batch Cardamom Ginger Peach Jam

A quick and easy small-batch peach jam infused with warm cardamom and spicy fresh ginger, perfect for homemade preserves without the fuss of large batches.

  • 2 cups diced fresh peaches (about 3 medium peaches), peeled and pitted
  • 3/4 cup granulated sugar (150g)
  • 1 tablespoon fresh ginger, finely grated
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup water (60 ml)
  • 1 teaspoon pectin (optional)

Instructions

  1. Prepare the peaches by scoring an ‘X’ on the bottom, blanching in boiling water for 30 seconds, then plunging into ice water to slip off skins. Dice into 1/2-inch pieces.
  2. Finely grate 1 tablespoon fresh ginger. Adjust to 2 teaspoons if less heat is desired.
  3. Combine diced peaches, sugar, grated ginger, ground cardamom, lemon juice, and water in a medium heavy-bottomed saucepan. Stir gently to mix.
  4. Place saucepan over medium heat and bring mixture to a gentle boil, stirring frequently to prevent sticking, about 5 minutes.
  5. Lower heat to medium-low and simmer uncovered, stirring occasionally, until jam thickens and peaches soften but remain somewhat intact, about 25 to 30 minutes. If using pectin, add halfway through and stir well.
  6. Test the set by placing a spoonful on a chilled plate; if it wrinkles and holds shape after cooling for a minute, jam is ready. If too runny, simmer a few more minutes.
  7. Remove from heat and let cool slightly before transferring to clean jars or containers. Store in refrigerator and use within two weeks.

Notes

Use ripe but firm peaches for best texture and sweetness. Stir gently and regularly to avoid burning. Pectin is optional but helps speed up thickening. Store jam refrigerated up to two weeks or freeze for longer storage. Adjust ginger amount to taste. Frozen peaches can be used if thawed and drained.
