  • 6 bone-in, skin-on chicken thighs (23 pounds / 900-1350g)
  • 2 medium sweet potatoes, peeled and cut into 1-inch chunks (about 1 pound / 450g)
  • 4 large garlic cloves, minced
  • 1/3 cup honey (113g)
  • 1/4 cup low sodium soy sauce (60ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1/2 cup chicken broth (120ml)
  • 1 tablespoon cornstarch (8g), mixed with 2 tablespoons cold water
  • 1 tablespoon olive oil (15ml), for browning chicken (optional)
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • Chopped fresh parsley or green onions for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels.
  2. Peel and cube the sweet potatoes into roughly 1-inch chunks.
  3. Mince the garlic cloves finely.
  4. Heat olive oil in a skillet over medium-high heat. Brown chicken thighs skin-side down until golden and crispy, about 4-5 minutes per side. Transfer to slow cooker.
  5. Place sweet potato chunks and minced garlic around and under the chicken in the slow cooker.
  6. In a bowl, whisk together honey, soy sauce, apple cider vinegar, chicken broth, black pepper, and salt.
  7. Pour the sauce evenly over the chicken and sweet potatoes.
  8. Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours until chicken reaches 165°F (74°C) and is tender.
  9. About 15 minutes before serving, mix cornstarch with cold water to make a slurry. Stir into slow cooker and increase heat to high if needed. Cook uncovered until sauce thickens to a glaze-like consistency.
  10. Taste and adjust seasoning if needed. Garnish with chopped parsley or green onions before serving.

Notes

Browning the chicken before slow cooking is optional but recommended for better flavor and texture. Adjust salt depending on soy sauce used. Check chicken tenderness at 3.5 hours if your slow cooker runs hot to avoid drying out. You can substitute sweet potatoes with butternut squash or regular potatoes. For gluten-free, use tamari instead of soy sauce. Add red pepper flakes for a spicy twist.
