Instructions

  1. Prepare the mascarpone cream: Beat the mascarpone cheese in a mixing bowl until smooth and creamy.
  2. Add cold heavy cream, powdered sugar, vanilla extract, and lemon zest to the mascarpone. Whip on medium-high speed until soft peaks form.
  3. Gently wash strawberries, blueberries, and raspberries. Hull and slice strawberries into thin pieces. Pat all berries dry with a paper towel.
  4. Cut the angel food cake into roughly 1-inch cubes, handling gently to keep pieces intact.
  5. Start layering the trifle: place about one-third of the cake cubes at the bottom of the bowl.
  6. Spread one-third of the mascarpone cream evenly over the cake layer.
  7. Scatter a mix of berries over the cream layer, distributing colors evenly.
  8. Repeat layering two more times: cake, cream, then berries, finishing with a generous berry topping.
  9. Cover the trifle with plastic wrap and refrigerate for at least 1 hour to let flavors meld and cake soften.
  10. Just before serving, optionally sprinkle fresh mint leaves on top for garnish.

Keep mascarpone at room temperature for smooth mixing and heavy cream cold for better whipping. Avoid overwhipping the cream to prevent graininess. Pat berries dry to avoid soggy layers.
