A simple, fuss-free peach cobbler made in one bowl with fresh peaches and a buttery cinnamon streusel topping. Perfect for summer with minimal cleanup and maximum flavor.

Ingredients

Scale
  • 5 cups fresh peaches, peeled and sliced
  • 1/3 cup granulated sugar (for peaches)
  • 1 cup all-purpose flour (for batter)
  • 1/2 cup granulated sugar (for batter)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk (or 2%)
  • 1/4 cup unsalted butter, melted (for batter)
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup all-purpose flour (for streusel)
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed (for streusel)

Instructions

  1. Prepare the peaches: Peel and slice peaches into 1/2-inch thick wedges. Toss with 1/3 cup granulated sugar in a large bowl and set aside to macerate.
  2. Mix the batter: In the same bowl, add 1 cup flour, 1/2 cup granulated sugar, baking powder, and salt. Stir to combine. Pour in milk, melted butter, and vanilla extract if using. Mix gently until just combined.
  3. Assemble the cobbler: Pour batter evenly into a greased 9×13-inch baking dish. Spoon peaches and juices evenly over the batter without stirring.
  4. Make the cinnamon streusel topping: In a small bowl, combine 1/2 cup flour, brown sugar, cinnamon, and cold cubed butter. Rub butter into dry ingredients until coarse crumbs form.
  5. Top and bake: Sprinkle streusel evenly over peaches. Bake at 350°F (175°C) for 45-50 minutes until topping is golden and peach juices bubble. A toothpick inserted in batter should come out clean.
  6. Cool slightly before serving: Let cobbler cool 10-15 minutes to thicken juices before serving.

Notes

Macerate peaches with sugar to release juices and keep cobbler moist. Keep butter cold for streusel to create crumbly topping. Avoid overmixing batter to maintain tender crumb. Use ripe peaches for best flavor. Let cobbler cool before serving to thicken juices. Tent with foil if streusel browns too fast.
