Easy No-Heat Turkey Pinwheel Lunchbox Wraps

These no-heat turkey pinwheel wraps are quick, healthy, and perfect for lunchboxes or light snacks. They combine deli turkey, creamy herb spread, crunchy veggies, and soft tortillas for a satisfying, flavorful meal.

  • 4 large flour tortillas (10-inch diameter, whole wheat optional)
  • 810 thin slices deli turkey (preferably nitrate-free)
  • 4 ounces cream cheese, softened (regular or light)
  • 2 tablespoons mayonnaise (or Greek yogurt as a swap)
  • 2 tablespoons finely chopped dill pickles
  • ½ cup shredded sharp cheddar cheese
  • A handful fresh spinach leaves, washed and patted dry
  • Optional: ¼ cup finely chopped cucumber or red bell pepper
  • A pinch freshly ground black pepper
  • A light sprinkle garlic powder

Instructions

  1. In a medium bowl, stir together softened cream cheese and mayonnaise until smooth. Add black pepper and garlic powder; mix well.
  2. Finely chop dill pickles and optional veggies; toss into the cream cheese mixture to combine.
  3. Place one tortilla flat on a cutting board. Spread about ¼ of the cream cheese mixture evenly over the surface, leaving a ½ inch border at the edges.
  4. Layer 2–3 slices of deli turkey evenly over the spread. Sprinkle about 2 tablespoons shredded cheddar cheese over the turkey. Add a few fresh spinach leaves on top.
  5. Starting from one edge, roll the tortilla tightly into a log shape. Use gentle pressure to keep it snug but avoid tearing. Secure with plastic wrap if not slicing immediately.
  6. Using a sharp serrated knife, slice the rolled wrap into 1-inch thick pinwheels, aiming for 6–8 pinwheels per tortilla.
  7. Place pinwheels on a plate or container, cover, and refrigerate for at least 30 minutes to let flavors meld and firm up the spread.

Notes

Warm tortillas slightly in microwave for 10–15 seconds if they crack while rolling. Use thinly sliced deli turkey for easier rolling. Chill wraps before slicing for cleaner cuts. Store wrapped tightly in fridge up to 2 days; best eaten within 24 hours. Slice just before serving to avoid drying edges.
