These no-cook turkey avocado pinwheel wraps are quick, healthy, and delicious snacks or light meals that come together in under 10 minutes. Creamy avocado spread, savory turkey, and fresh spinach rolled in soft tortillas make a satisfying and fresh treat.

  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • A handful fresh spinach leaves
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Prepare the avocado spread: In a mixing bowl, mash 1 ripe avocado with a fork until smooth but a bit chunky. Stir in 2 tablespoons plain Greek yogurt, 1 tablespoon fresh lime juice, 1/2 teaspoon garlic powder, and salt and pepper to taste. Mix until combined and creamy (about 3 minutes).
  2. Lay out the tortillas flat on a clean surface or cutting board. If tortillas feel stiff, wrap in a damp paper towel and microwave for 10-15 seconds to warm gently.
  3. Spread a generous 2 tablespoons of the avocado mixture evenly over each tortilla, leaving about 1/2 inch around the edges clear.
  4. Layer about 2 ounces of deli turkey slices over the avocado spread, followed by a handful of fresh spinach leaves. If using, sprinkle 2 tablespoons shredded cheddar cheese on top.
  5. Roll each tortilla tightly into a log shape, pressing firmly but gently to avoid squeezing out the filling.
  6. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 15 minutes to firm up.
  7. Unwrap and slice each roll into 1-inch pinwheels using a sharp knife. Each wrap yields about 8 pinwheels.
