  • 4 cups granulated sugar
  • 1 box (1.75 oz / 49g) powdered fruit pectin (no-cook/freezer variety)
  • Optional: 1-2 tablespoons fresh lemon juice

Instructions

  1. Prepare the peaches by peeling (blanch in boiling water for 30 seconds then plunge into ice water or peel with a knife), pit, and roughly chop.
  2. Mash the peeled peaches in a large mixing bowl with a potato masher or fork until chunky but spreadable (about 4 cups mashed).
  3. In a separate bowl, combine granulated sugar and powdered fruit pectin thoroughly to prevent clumps.
  4. Gradually sprinkle the sugar-pectin mixture into the mashed peaches, stirring constantly to evenly distribute and activate the pectin.
  5. Optionally stir in 1-2 tablespoons fresh lemon juice for brightness and acidity.
  6. Let the mixture rest at room temperature for about 10 minutes to allow the pectin to work and sugar to dissolve.
  7. Spoon the jam into clean, freezer-safe jars or containers, leaving about ½ inch headspace. Wipe rims clean before sealing.
  8. Store the jam in the refrigerator for up to 3 weeks or freeze for up to 1 year. Thaw frozen jam in the fridge overnight before use.

Notes

Use ripe, juicy peaches for best flavor. Mixing sugar and pectin dry before adding prevents clumps. Let the jam rest to thicken properly. If jam is too runny after chilling, stir in a small pinch more pectin dissolved in water and refrigerate again. Leave headspace in containers for freezing expansion.
