Quick and wholesome no-bake granola energy bites featuring dark chocolate chunks, perfect for a healthy snack on the go.

Ingredients

  • 1 ½ cups (135g) old-fashioned rolled oats
  • 1 cup (100g) crunchy, lightly sweetened granola
  • ½ cup (125g) natural peanut butter (smooth or chunky)
  • ⅓ cup (113g) honey
  • ½ cup (90g) dark chocolate chunks or chips (70% cacao or higher)
  • 2 tablespoons (20g) chia seeds (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt

Instructions

  1. Mix the rolled oats, granola, chia seeds, and sea salt in a large bowl until evenly combined.
  2. Warm the peanut butter and honey together in a microwave-safe bowl for about 20 seconds, then stir until smooth and slightly runny.
  3. Add vanilla extract to the warm peanut butter and honey mixture and stir.
  4. Pour the wet mixture over the dry ingredients and mix thoroughly until sticky but not wet. Add more honey or nut butter if too dry.
  5. Gently fold in the dark chocolate chunks, being careful not to overmix.
  6. Form the mixture into 1-inch balls using your hands or a small cookie scoop and place them on a lined baking sheet or plate.
  7. Chill the formed bites in the refrigerator for at least 30 minutes to firm up before serving.

Notes

Warm the peanut butter and honey to make mixing easier and help the bites stick. Fold in chocolate chunks gently to prevent melting. Chill bites fully for best texture; freeze for longer storage.
