Instructions

  1. Make the Sugar Cookie Crust: In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes). Add vanilla extract and mix briefly. Gradually add the flour and salt, mixing until the dough just starts to come together. Add cold water, one tablespoon at a time, until the dough forms a ball that holds without being sticky (about 2-3 tablespoons). Do not overwork the dough.
  2. Press the Dough Into the Pan: Transfer the dough to a 9-inch round pizza pan. Using your fingers or the bottom of a glass, press the dough evenly across the pan’s bottom and slightly up the sides to form a shallow crust. Cover with plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare the Cream Cheese Topping: In a chilled mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, beat until combined. In a separate bowl, whip the heavy cream until it forms soft peaks (about 3-5 minutes). Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  4. Assemble the Fruit Pizza: Once the crust is firm, spread the cream cheese topping evenly over it, smoothing out with a spatula. Arrange the sliced strawberries, blueberries, and raspberries on top in an even layer or pattern. Optionally, brush warmed apricot jam over the berries for a glossy finish.
  5. Chill Before Serving: Refrigerate the assembled pizza for at least 1 hour to let the flavors meld and the topping set. Slice with a sharp knife and serve cold.
