This easy honey roasted fig and brie crostini with fresh thyme is a quick and elegant appetizer featuring caramelized figs, creamy brie, and a hint of herbal thyme on crunchy toasted baguette slices.

  • 810 medium fresh figs, halved
  • 6 oz (170 g) brie cheese, sliced or cut into small pieces
  • 23 tablespoons honey (local, raw preferred)
  • 2 teaspoons fresh thyme leaves, plus sprigs for garnish
  • 1 small baguette, sliced into ½-inch (1.25 cm) thick pieces
  • 1 tablespoon olive oil
  • Pinch of freshly ground black pepper (optional)
  • Light sprinkle of sea salt or flaky salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse fresh figs gently and pat dry. Cut each fig in half lengthwise and place them in a mixing bowl.
  3. Drizzle about 2 tablespoons of honey over the figs, sprinkle 2 teaspoons of fresh thyme leaves, and toss gently to coat. Let them sit for 5 minutes to soak in the honey.
  4. Arrange figs on a baking sheet, cut side up, leaving space between halves for even roasting.
  5. Roast figs for 12-15 minutes until soft and caramelized but not mushy. Watch closely after 10 minutes to prevent burning.
  6. While figs roast, slice the baguette into ½-inch thick pieces and brush each slice lightly with olive oil on both sides.
  7. Toast the bread slices on a separate baking sheet in the oven for 6-8 minutes, flipping halfway, until golden and crisp. Alternatively, use a toaster or grill pan.
  8. Slice brie cheese into thin slices or small wedges that fit nicely on each crostini.
  9. Assemble crostini by placing a slice of brie on each toasted bread piece, then topping with a warm honey-roasted fig half.
  10. Garnish each crostini with a small pinch of flaky sea salt, freshly ground black pepper, and a tiny sprig of fresh thyme.
  11. Serve immediately while warm so the brie stays soft and melty.

Notes

If fresh figs are unavailable, substitute with dried figs softened in warm water. For dairy-free, use vegan or cashew cheese. For gluten-free, use gluten-free baguette or crackers. To speed up cooking, roast figs and toast bread simultaneously on separate racks, rotating halfway. Watch figs closely to prevent honey from burning. Brie softens best when placed on warm bread before adding figs.
