  • 8 ounces thinly sliced ham (honey ham or smoked ham)
  • 6 ounces sharp cheddar cheese, thinly sliced or shredded
  • 1/2 cup shredded lettuce (optional)
  • 2 tablespoons chopped fresh chives or green onions (optional)

Instructions

  1. Make the cream cheese spread: In a large mixing bowl, combine the softened cream cheese and sour cream. Beat with a hand mixer on medium speed for 2-3 minutes until light, fluffy, and completely smooth. Add the garlic powder, onion powder, salt, and pepper, then beat for another 30 seconds to combine.
  2. Prepare your work surface: Lay a large flour tortilla flat on your cutting board. Use a spatula to spread about 2-3 tablespoons of the cream cheese mixture evenly across the entire surface of the tortilla, going all the way to the edges.
  3. Layer the ham: Place 2-3 slices of ham over the cream cheese spread, overlapping them slightly to cover the tortilla completely. Tear the ham slices in half if needed to avoid bare spots.
  4. Add the cheese: Sprinkle or lay the cheddar cheese evenly over the ham. If using shredded cheese, use about 1/4 cup per tortilla. If using sliced cheese, lay 2-3 slices over the ham, tearing them to fit.
  5. Roll it up tight: Starting from one edge, carefully roll the tortilla as tightly as you can without tearing it. Use your fingers to tuck the filling in as you roll. Once rolled, place it seam-side down on the cutting board.
  6. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap, twisting the ends to secure it. Place the wrapped rolls on a baking sheet or plate and refrigerate for at least 30 minutes.
  7. Slice and serve: Unwrap the chilled rolls and place them on a clean cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels using a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.
  8. Optional garnish: If serving immediately, sprinkle the pinwheels with fresh chives or green onions for color. If packing for lunch, skip the garnish and place directly in lunchbox.
