A fresh, colorful, and easy-to-make cowboy caviar dip loaded with black beans, corn, tomatoes, and avocado, perfect for game day or casual gatherings.

  • 1 can whole kernel corn, drained (or 1 cup fresh/frozen corn)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 ripe avocado, diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Tortilla chips, sturdy and thick, for serving

Instructions

  1. Drain and rinse the canned black beans and corn well in a colander. Let them drain completely (about 5 minutes).
  2. Halve the cherry tomatoes, finely dice the red bell pepper, mince the jalapeño (remove seeds for less heat), and finely chop the red onion and cilantro. Dice the ripe avocado last to prevent browning (about 10 minutes).
  3. In a mixing bowl, gently toss together the black beans, corn, tomatoes, bell pepper, onion, jalapeño, and cilantro. Carefully fold in the diced avocado to keep chunks intact (3 to 5 minutes).
  4. In a small bowl or measuring cup, whisk together the fresh lime juice, olive oil, cumin, garlic powder, salt, and pepper. Adjust seasoning to taste.
  5. Pour the dressing over the mixed ingredients and gently combine until evenly coated. Let the dip sit for at least 10 minutes at room temperature to allow flavors to marry. For a chilled option, refrigerate for 30 minutes.
  6. Transfer the dip to a serving bowl and surround with sturdy tortilla chips. Garnish with cilantro leaves or a sprinkle of chili powder if desired.

Notes

Drain beans and corn thoroughly to avoid watery dip. Add avocado last and fold gently to keep texture. Lime juice helps prevent avocado browning. Refrigerate for a chilled dip or serve at room temperature. Can prep ahead without avocado. Use sturdy tortilla chips for best scooping.
