  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon

  • 1/2 cup unsalted butter (113g), softened
  • 1/2 cup brown sugar (100g), packed
  • 1/4 cup granulated sugar (50g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 medium apple (about 150g), peeled and finely shredded (preferably Gala or Honeycrisp)
  • 1/2 cup chopped walnuts or pecans (optional)
  • Optional add-ins: 1/4 cup raisins, dried cranberries, or mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Peel and finely shred the apple using a box grater. If too juicy, press shredded apple with paper towels to remove excess moisture.
  3. In a large bowl, whisk together the flour, rolled oats, baking powder, cinnamon, and salt.
  4. In another bowl, cream the softened butter with brown sugar and granulated sugar using an electric mixer or sturdy spoon until light and fluffy, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  7. Fold in the shredded apple and chopped nuts if using. The batter will be thick and slightly sticky.
  8. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing about 2 inches apart. Flatten each slightly with the back of a spoon.
  9. Bake for 12-15 minutes, watching closely after 12 minutes. Edges should be set and centers soft but not raw.
  10. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
