Easy Cherry Tomato Bruschetta with Creamy Lemon Ricotta

A fresh and effortless summer snack featuring juicy cherry tomatoes and tangy lemon ricotta on toasted baguette slices. This bruschetta is quick to prepare and perfect for gatherings or light meals.

  • 2 cups (300g) cherry tomatoes, halved
  • 1 cup (250g) whole milk ricotta cheese
  • Zest and juice of 1 medium lemon
  • 1 clove garlic, minced
  • A handful fresh basil, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1 small baguette, sliced into ½-inch (1.3cm) thick pieces

Instructions

  1. In a medium bowl, toss the halved cherry tomatoes with minced garlic, chopped basil, olive oil, balsamic vinegar (if using), salt, and pepper. Let sit at room temperature for at least 10 minutes.
  2. In a small bowl, combine ricotta cheese with lemon zest and about 1 tablespoon fresh lemon juice. Stir until smooth and creamy. Adjust salt to taste.
  3. Preheat oven to 375°F (190°C) or heat a grill pan over medium heat. Brush baguette slices lightly with olive oil on both sides. Toast on baking sheet or grill pan until golden and crisp, about 3-4 minutes per side.
  4. Spread a generous layer of lemon ricotta over each toasted bread slice. Spoon marinated cherry tomatoes on top, including some juices. Optionally, garnish with a basil leaf or drizzle olive oil.
  5. Serve immediately to enjoy the crisp bread and juicy tomatoes.

Notes

Let the tomato mixture rest for at least 10 minutes to enhance flavor and prevent soggy bread. Use day-old bread if possible for better texture. Assemble just before serving to keep bread crisp. Drain excess tomato juice if too watery. Red pepper flakes add a nice spicy kick.
